OUR STORY

Humble Origins

From the humble beginnings of mountain folk and hill people of the Appalachia and Blue Ridge Mountains, smoking meat was mainly a way of preserving our food. We used to have hog dressings the Friday and Saturday after thanksgiving up on Cub Creek at the Dodd's place. It was a family thing where folks got together to share in a necessary chore. When we had our share loaded, we would make our way home to start the butchering and curing preparations. The picture to the right is one of my dad standing in the doorway of our smokehouse. It has long been torn down.
